Four cooks describe how they started cooking professionally

Rosalind

For eight years I was a lawyer, with a good salary and a pension, and I spent my weekends making elaborate cakes for friends. When I turned thirty-four, I realised the weekends were the only part of my life I looked forward to, so I resigned and enrolled at a pastry school. My parents thought I’d lost my mind. My first head chef was terrifying, but she taught me more in a month than I’d learnt in a year of classes. What surprised me was how much of my old job came with me. Pastry is all about precision and meeting deadlines, and after years of checking contracts line by line, weighing flour to the gram felt completely natural. The hours are actually longer than they were in law, which nobody believes, and the pay is a fraction of what it was. I don’t regret it for a second.
